Carrots are the most important outdoor vegetables in German agriculture. The share of organic carrots is exceptionally high and reaches 17%. Carrots are commercially available all year round as fresh and stored goods as well as processed products. Carrot juice is one of the most important processed products. One of the main objectives of the project is to comprehensively describe and improve the quality of organic carrots, both fresh and processed to carrot juice. The influence of the variety, cultivation location and processing method on the quality of the final product will be investigated. For consumers of organic products, good taste, well-being, and health effects are important purchasing motives. In the project, the consumers expectations on quality will be considered by applying various complementary research methods.
